Hey there food lovers!

Summer is in full swing, and that means it’s time to embrace all the fresh, vibrant flavors this season has to offer. One of my absolute favorite summer dishes is a Watermelon, Feta, and Mint Salad. It’s the perfect combination of sweet, salty, and refreshing, making it an ideal side dish for picnics, & BBQs (Hello Independence Day!), or even a light lunch. Trust me, once you try it, you’ll be hooked!

Ingredients:

  • 1 large watermelon
  • 1 8-oz feta cheese block
  • 1 cup of fresh mint leaves
  • 1 lemon, juiced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

    1. Prep the Watermelon: Start by cutting your watermelon into bite-sized cubes. Get a seedless watermelon—it saves a lot of time and effort. Chill the cubes in the refrigerator for at least an hour before making the salad. This step isn’t strictly necessary, but it makes a big difference.
    2. Cut your Feta Cheese: Take your feta cheese block and cut into little blocks, slightly smaller than your watermelon cubes. Add your feta to the watermelon cubes. You can also crumble the feta but I like a big feta chunk myself.
    3. Slice your mint: Using herb scissors or kitchen shears, cut the mint into your bowl with the watermelon and feta.
    4. Dress it up: Drizzle the olive oil and lime juice over the salad and add your salt and pepper. Gently toss everything together until the ingredients are well mixed and evenly coated.
    5. Serve and Enjoy: Serve immediately or keep cold in the fridge! This salad is best served fresh, while the watermelon is still crisp and the mint is vibrant, but it is also fine for leftovers!

Tips and Variations:

    • Add Some Nuts: Toasted pine nuts or sliced almonds add a nice crunch and add some healthy fat and protein to make this salad a meal on it’s own.
    • Extra Herbs: If you’re a fan of herbs, try adding a bit of fresh basil or cilantro for an extra layer of flavor.
    • Add a Punch: If you like a little more kick, try adding some red onion to spice it up.
    • Avocado: For a creamier texture, toss in some diced avocado.

Plus, it’s super easy to make—perfect for those lazy summer days when you’d rather be soaking up the sun than spending hours in the kitchen.
